FANCY a big breakfast and hearty lunch to see you through a lazy Sunday?

Morrisons’ in-store cafes have now reopened, offering traditional favourites such as fish and chips and its famous Big Breakfast, all at reduced prices.

But if you can’t get out, why not make your own at home? Here are three family favourite meals with a twist to keep you feeling full.

Shakshuka

Serves two – £2.32 per serving

Preparation time: five minutes

Cooking time: 20 minutes

YOU NEED:

  • 1 tbsp olive oil
  • 2 red onions (chopped)
  • 1 red chilli (deseeded)
  • 1 garlic clove
  • 1 small bunch coriander
  • 2 400g cans tinned cherry tomatoes
  • 1 tbsp caster sugar
  • 4 extra-large free range eggs
  • 4 crusty rolls

METHOD: Heat the oil in a frying pan that has a lid, then soften the onions, chilli, garlic and coriander stalks for five minutes.

Stir in the tomatoes and sugar, then bubble for eight to ten minutes until thick.

Using the back of a large spoon, make four dips in the sauce, then crack an egg into each one.

Put a lid on the pan and cook over a low heat for six to eight minutes, until the eggs are done to your liking. Scatter with the coriander leaves and serve with crusty bread.

Crispy fish finger pie

Serves four – £1 per serving

Preparation time: 20 minutes

Cooking time: 20 minutes

YOU NEED:

  • 1 packet 10 fish fingers
  • 1 pack frozen mashed potato, or you can make your own
  • 240g garden peas
  • 2 tbsp grated cheese

METHOD: Cook the fish fingers as per pack instructions. Microwave mash as per the pack instructions and also cook the peas as instructed.

Assemble the pie by putting the cooked fish fingers in the base of a pie dish. Top with the peas and cover the top with the mashed potato.

Next, sprinkle with grated cheese.

Place under grill for five minutes to melt and brown the cheese, or you can put it in the oven for approximately 20 minutes at 200C/gas 6.

Pitta pizzas

Serves four – 97p per serving

Preparation time: five minutes

Cooking time: 20 minutes

YOU NEED:

  • 4 pitta breads
  • 80g tomato pasta sauce
  • 60g grated cheddar cheese
  • 1 red pepper chopped
  • 1 green pepper chopped

METHOD: Preheat the oven to 190C/gas 5. Bake or toast the pittas and cook both sides. Dollop a tablespoon of tomato sauce on each pitta and spread out.

Top with grated cheese, then sprinkle over garnish of chopped peppers.

Bake in the oven at 190C/gas 5 for ten to 15 minutes until bubbling and golden brown. Serve with salad for a light lunch.
