Elizabeth Chambers expands Texas-based Bird Bakery to Colorado

It’s been quite a year for baked goods in Denver, and now a popular Texas bakery with a big name attached has moved to town, bearing cookies, pies and other sweets.

Bird bakery opened in March in the Tech Center. Its owner, Elizabeth Chambers, is a television personality and entrepreneur who grew up in Denver before settling in Texas and opening her first Bird in San Antonio in 2012, followed by a second in Dallas in 2016.

“I wanted to open our third location in Denver because this city has always had a very special place in my heart,” Chambers wrote in an email.

The newest Belleview Promenade location of Bird has been in the works for three years, Chambers said, adding that her parents still live in Denver, and her children are excited to see their grandparents more often. (Chambers recently split from actor Armie Hammer, whom she was married to for 10 years.)

But Bird is all about family, and especially the women in hers, Chambers said. She first opened the bakery in honor of her grandmother, who owned a catering business in San Antonio. Now her own company continues to be female-led.

“Most of the recipes we serve at Bird are my grandmother’s recipes and the rest are my mother’s recipes and mine,” she said. “It has always been important to me that my mother’s and grandmother’s recipes and legacies live on forever, and I certainly hope I’m able to achieve that with Bird bakery.”

On the menu, some of the founder’s favorite items are banana pudding (not yet in Denver, but coming soon), lemon squares ($3.59) and carrot cupcakes ($3.50 each). She also “craves” the California turkey sandwiches ($10.59) with raspberry chipotle mayo and tomato basil soup made with coconut milk.

Bird serves breakfast, lunch and all-day sweets and donates any leftover baked goods at the end of the day to local community organizations.

For customers looking to dine in, the new store is open and airy. But for those ordering to-go, know that a half-dozen ($11) or dozen ($22) mini cupcakes will be packaged in an adorable egg carton for you to take home and surprise someone.
