Foodie shares money-saving tortilla cup egg hack to make protein-rich breakfast

A savvy home cook got creative with leftover bits and pieces from her fridge – and crated a delicious, high protein option for breakfast or lunch.

Judy Mansfield posted her tortilla wrap egg cups recipe to a popular budget cooking group on Facebook.

People were impressed with her hack which reduces food waste and could save you some cash.

All you’ll need for the cups is some tortilla wraps, eggs, milk and spare vegetables, plus some cheese if you want it.

Judy explained: “A bit of creativity going on today with some tortilla wraps about to go out of date!

“Cut circles from them to line greased patty tins, then add a mix of peas, sweetcorn, chopped spring onion, and grated cheese."

She continued: “Make up a mix of egg and milk and pour carefully into each one.

“Bake until set (about 20 mins) at 180cm till set.

“Good warm or cold; a nice little change for lunch boxes, or have a couple warm with a salad or chips for lunch?”

The egg and veg cooks inside the tortillas as they crunch up and the cheese melts.

So, basically they’re everything you could want in a dish.

Judy told the Daily Star: "It is having the time to do this, rather than paying for convenience foods that has been an unexpected bonus of lockdown.

"I was inspired by the Dairy Diary book."

And, the clever home cook had more ideas too…

Judy said: “I’m going to have a go using tuna and tomato in the next ones, with a tiny smear of Dijon mustard in the bottom.

“And the leftover scraps of tortilla make great tortilla chips for a snack!"

She added: “Cut them with scissors to rough triangles and leave them on a baking tray to dry for a bit .

“Then spray them with oil and sprinkle with salt and perhaps paprika or chilli powder and bake in a moderate oven until crisp (you might need to turn them over half way).”

You can use whatever vegetables or cheese you have in the fridge.

One person commented on the post, and said: “They look good. They would be quick and easy for picnic food.”

“Looks delicious,” added another.
